Bacon Aioli
I can still here the jars of aioli rattling now.
It was the summer of 2005 and me and Dominic had taken 3.5 year old Kyle on his first holiday abroad. We were on our way home from two weeks in the canary island of Lanzarote.
We had an amazing time and after years of telling my hubby how amazing the Spanish aioli was, I had spent two weeks eating as much of it, as my body could handle.
Just like with mainland Spain, there was a lot of café’s serving up bread with aioli and I enjoyed every last bit.
After two weeks, I made sure I headed to the Spanish supermarket and grabbed as much of it as my hand luggage could handle.
They were glass jars and as we boarded the flight home to England, there was a crazy rattling sound.
I didn’t care that people looked at us as I had enough aioli to last a few months.
Fast forward many years and I can now nip over the border into Spain and get the plastic containers.
But in between visits, what I do instead, is make my own bacon aioli with the kids, with lemon from our lemon tree and a quality mayonnaise.
It is fantastic, especially when you add air fryer bacon to the mix.

What Is Bacon Aioli?
Bacon aioli is an aioli that is loaded with bacon. Often bacon that has been chopped into bacon bits.
Though if you have not heard of aioli before, then let me tell you that its one of Spain’s best foods.
Aioli is a rich, thick, and creamy mayonnaise that is loaded with garlic and lemon juice. You have got to love garlic to love aioli. Traditionally in Spain aioli is served with rustic Spanish bread when you are waiting for your food to arrive as a pre-starter.
What Is Bacon Crumble Aioli?
Bacon crumble aioli is similar to regular bacon aioli. The only difference is that you often use dehydrated bacon and crumble the bacon into the mayonnaise.
What Does Bacon Aioli Taste Like?
Ask the hubby, who doesn’t do aioli and he will say “way too much garlic in a mayonnaise”. That is because a classic authentic bacon aioli is very high in raw garlic.
As an aioli addict, I would call it a rich mayonnaise with a kick of garlic and bacon.
Some describe it as a bacon mayonnaise spread, but because its more a mayonnaise I would reference it as
If you like garlic and you like bacon, then you will love bacon aioli.
Why Air Fryer Bacon Aioli?
The biggest complaint for many with aioli is that its too strong on the garlic. This is because authentic aioli has uncooked garlic in it.
However, if you cook the garlic cloves in the air fryer first, you can reduce this and make it more mild in garlic.
Add to this that you need to cook your bacon anyway, that you can save time by cooking the bacon and garlic together like this in the air fryer:

Then you can use your blender to bring the ingredients together to make a delicious mayo.
Bacon Aioli Ingredients

I am sure if you are like me, the chances are you will have the ingredients for bacon aioli in your pantry already:
Bacon – It can be bacon bits, it can be bacon you can cut into bacon bits, or it can be bacon that has been dehydrated that is ready to be crumbled.
Mayonnaise – I recommend a good quality mayonnaise as it will make such a different to the aioli. Though if you are on a diet you can go with a lighter mayo.
Garlic – You don’t need a lot. As you can see, we just used two large garlic cloves. And because the mayonnaise is going to be blended you don’t have to worry about mincing your garlic.
Lemon – I have a lemon tree and just grabbed a lemon from the tree and then used the juice and rind.
Those are the main ingredients, and it is so simple.
How To Make Bacon Aioli?

It is so easy to make this homemade bacon aioli:
- Air fry bacon bits and whole garlic cloves.
- Load into the blender all ingredients.
- Blend and enjoy.
What Happened To My Garlic Bacon Aioli?
A little bit of behind the scenes for you at Recipe This. When I was making the aioli (like with many recipes) I had a four year old and a six year old, excited and ready to try mummy’s latest recipe.
I went into the kitchen to grab a dish and came back and they had eaten a good portion of the bacon.
I looked down and realised I hardly had any bacon to sprinkle on top of the aioli. So that is why your bacon aioli looks so bare.
What To Serve With Your Bacon Mayo Sauce?
I love that in other countries it is popular to have a bacon aioli pizza or a bacon aioli hamburger. But for me I just love to dip my garlic mayonnaise into something delicious. Here are a few ideas for you to try at home:

Ingredients

Bacon aioli Ingredients:
- 240 ml Mayonnaise
- 2 Garlic Cloves
- 25 g Spanish Bacon
- 1 Medium Lemon juice and rind
- Salt & Pepper
- Extra Virgin Olive Oil Spray
Instructions
- Place peeled garlic cloves and diced bacon into the air fryer basket. Spray with extra virgin olive oil. Cook for 6 minutes at 180c/360f.
- When the air fryer beeps load 75% of the bacon into a blender with the garlic, mayonnaise, lemon rind and lemon juice. Season with salt and pepper.
- Blend and load into a dipping dish. Sprinkle with the remaining bacon before serving.
