I originally shared with you how to make air fryer carrot cake back in early 2016 and decided to update you on how delicious and easy air fryer carrot cake is to make, as well as sharing with you some alternative carrot cake ideas.

Let me start by saying that until moving to Portugal in 2008 I had never made carrot cake or even tried it.

It wasn’t that I was against it or anything there was just always something else that grabbed my attention first. There were the profiteroles, the chocolate eclairs, the flapjacks and the chocolate cake.

I mean come on, as a teenager and you were asked between carrot cake and chocolate cake you would always choose the chocolate cake. People would think you were weird otherwise.

Then I tried carrot cake for the first time at my local Portuguese café and I was hooked. It tasted amazing and I wanted more and more of it.

I had never tried cake so moist and realised that you didn’t have to have chocolate cake all the same. Though, most of the time is still on the agenda!

In this recipe today Dominic and I are making the carrot cake in the air fryer with a lovely quick orange cream cheese frosting.

Though I better confess that I have eaten all the leftover frosting as it is so amazing licking out the bowl even when you’re 38 years old!

Can You Cook Carrot Cake In An Air Fryer?

Absolutely and you MUST! Carrot cake in the air fryer is delicious and so easy to make too.

You can make it in your air fryer basket using a cake pan, in the air fryer oven using our favourite air fryer oven accessories and even turn your carrot cake into crumb bars.

Its just a case of deciding how you want to eat your air fryer carrot cake!

Since publishing my first air fryer carrot cake recipe 4 years ago, I have had so many questions about carrot cake.

From people that have never had carrot cake, to others that have made it and it hasn’t turned out right and they want to air fry it instead.

Therefore, I have answered all the questions you have asked me below, so that you can have a quick read before you make a batch of carrot cake.

Can carrot cake be made ahead of time? Yes it can. Make your carrot cake batter and load it into your cake pan. Then store it in the fridge for 2-3 days or until you plan to cook it. Or alternatively make your carrot cake ahead of time and then place it into the fridge ready for eating later.

Can carrot cake be made in a bundt pan? Yes it can. You can use any cake pan or baking pan that is non-stick. Though we are making our carrot cake in this square dish and cooking it in the air fryer.

Why is carrot cake made with oil? Carrot cake is made with oil because it makes the carrot cake taste a lot better. When you swap butter with oil it can make your cake much moister and give it the wow factor.

Which oil for carrot cake? Extra Virgin Olive Oil is the best and this is the one we use and love. It has great health benefits and also helps make your carrot cake even more delicious.

Carrot cake without baking soda? You don’t need baking soda at all in our air fryer carrot cake. We have tried carrot cake both with and without baking soda and found that it is better without.

Which nuts in carrot cake? Zero nuts. Making this carrot cake perfect if you follow a nut free diet. In fact, here at Recipe This we are a nut free site.

What spices in carrot cake? The main spice to add into a classic carrot cake is mixed spice. Here is the link to it and it gives wonderful spice blend to add to your cooking. Beyond carrot cake it is fantastic in Asian cuisine.

What does carrot cake taste like? It reminds me of many fruit-based cakes. Where it has the texture of bread, but with the taste of cake. Very much like banana bread and much healthier than a classic cake.

Why carrot cake? I like to have carrot cake because it is an Easter tradition, but also because carrot cake tastes good and is fantastic for carrot leftovers.

Carrot Cake And Cream Cheese Frosting

The final part of the carrot cake is the cream cheese frosting. Or what you might also call soft cheese icing.

In case you are wondering what’s in carrot cake frosting, it is made of 3 simple ingredients:

Even better, learning how to make carrot cake frosting is so EASY. In fact, I will have my carrot cake frosting made before the air fryer beeps to tell me that the air fryer carrot cake is cooked.

You load your cream cheese and frosting into a mixing bowl and using a hand mixer, whip up the cream cheese frosting until fluffy and light.

Add in the rind and juice of some orange and you are DONE!

You can also make it more fun by adding in colouring to your frosting, or just have it like it is.

How To Make Carrot Cake From Scratch?

To make air fryer carrot cake is SIMPLE and all you need to do is the following:

  1. Add mixed spice, carrots, flour and sugar into a bowl and mix well.
  2. Add eggs to the centre and using a fork beat the eggs into the rest of the carrot cake batter.
  3. Add milk and oil and mix with a fork.
  4. Load into your air fryer baking pan.
  5. While the carrot cake cooks make your cream cheese frosting.
  6. When the carrot cake cools load it up with cream cheese frosting and fridge for an hour.
  7. Serve and enjoy!

Air Fryer Carrot Cake (5 Ways)

Depending on what cake pan or cake tray you air fry your carrot cake can become different things. I love this because it can suit different occasions while sticking with the same carrot cake recipe.

Carrot Cake Traybake – Bake your air fryer carrot cake in the classic 8 by 8 air fryer oven tray and you will have a traybake. Or as you might call it a sheet dessert. I recommend using this air fryer oven tray.

Carrot Cake Slice – Whether you call them a carrot cake slice or a carrot cake crumb bar, they are easy to make using the traybake method. Simply cook as recommend in our recipe and then chop into slices and load up with our cream cheese frosting.

Carrot Cake – If you want a class carrot cake cook the batter in a round cake pan. Then once cooked slice and load icing between the two cake rounds.

Carrot Cake Cupcakes – Instead of loading up our carrot cake batter into a tray, add it to these silicone cups instead. Load it with the creamy frosting and you have carrot cake cupcakes!

Mini Carrot Cakes – Something else I like to do is load up carrot cake batter into moulds and cook it in the instant pot. It tastes similar to steamed puddings and load up with colourful icing and you have the perfect Easter carrot cakes.

Carrot Cake Cooking Time

The cook time for air fryer carrot cake is much less compared to carrot cake cooked in the oven. In fact, it is so low it is JUST 30 minutes.

We cooked our air fryer carrot cake in the air fryer oven and started it at 25 minutes at 170c and then finished it at 180c for a final 5 minutes.

Air Fryer Carrot Cake Ingredients:

  • Add into a bowl – mixed spice, grated carrots, flour and sugar and mix well.
  • Make a well in the middle and crack your eggs into it. Using a fork beat the eggs into the rest of the carrot cake batter.
  • Add milk and extra virgin olive oil.
  • Load cake batter into your air fryer baking pan. Cook for 25 minutes at 170c/340f, followed by a further 5 minutes at 180c/360f.
  • While the carrot cake cooks make your cream cheese frosting. Place the soft cheese and icing sugar into a bowl and using a hand mixer, mix the cheese into the sugar until light and fluffy. Add in the orange juice and rind and stir with a fork. Place into the fridge for an hour.
  • When the carrot cake is cooked allow to cool before loading it up with cream cheese frosting. Fridge for a little longer to let it set properly and then serve.


If cream cheese frosting is not your thing, then that is fine. Simply leave out the topping and eat them just as carrot cake crumb bars.
Place a cocktail stick in the middle and if it comes out clean your carrot cake is cooked.

      If they are smaller I would take it down by about 10c because they will not need the same amount of cook time either ????

      • Thanks Samantha, how long would you cook them for, individual ones (say the size of a little ramekin dish)?

        • No problem. If you have individual ones i would try 20 minutes just be careful when using ramekins as they might take longer to cook in the middle 🙂
